This boozy cobbler recipe will have you feeling peachy! I love making this recipe for brunch or as a dessert. It’s actually very simple to make and the results are always consistent. I made this the other weekend with Pillsbury Gluten Free Flour, for my sister, and the taste was identical. So yes, if you suffer from a gluten allergy or intolerance, now you can have your cobbler and eat it too! (The Amaretto is gluten free too!)

boozy peach cobbler
  • ½ C Unsalted Butter
  • 1 C Flour
  • 1⅓ C Sugar [divided]
  • ¼ C Amaretto
  • 1 Tbsp Baking Powder
  • Pinch of Salt
  • 1 C Milk
  • 5-7 Fresh Peaches [peeled and sliced]
  • 1 Tbsp Lemon Juice
  • Dash of Cinnamon
  1. Pre-heat oven to 375.
  2. Melt butter in a 13x9 baking dish.
  3. In a bowl, combine flour, sugar, baking powder and salt.
  4. Add milk and stir until batter becomes liquid [be sure to not over mix, I found that using my beloved kitchen aid brought less than satisfactory results]
  5. Pour batter over butter, do not stir.
  6. Mix the remaining ⅓ cup of sugar with peaches and add lemon juice.
  7. Gently spoon peaches over the batter, do not stir.
  8. Bake for 40-45 minutes until golden brown.
  9. Serve warm, if you can =], with a dollop of whipped cream.
  10. Note: I like to use the juice left over from the peach and amaretto mix to flavor the whipped cream or save it in the fridge for your next sangria!
