I’ve gotten a tad behind on posting my cakes, so this starts the beginning of me playing catch up! This cake was made for a special birthday back in April. The lovely birthday gal and I have known each other for years, so I was so excited to bake this cake for her! It’s made of four layers of gluten-free scratch carrot cake with the always loved cream cheese frosting. Carrot cake has always been one of my favorite flavors. The mix of sweet and spice is so yummy and it makes the house smell ahhh-mazing while it’s baking! Decor wise, it’s not your average carrot cake. I wanted to do something bright, artsy and little unexpected. I love this mix of mint and pastel shades with the sharp reddish orange dollops.
