I made a different version of this recipe a few months back, but wanted to dial up the flavor. This balsamic marinade adds so much flavor to the chicken and compliments the pesto and prosciutto. Next time, I will definitely be adding cheese- I honestly don’t know what I was thinking there! Any-who, this makes a great prep-ahead meal for the week or makes a great meal for date night! pesto & prosciutto balsamic chicken

Ingredients
  • 3 Large Chicken Breasts
  • ¼ C Olive Oil
  • ¼ C Balsamic Vinegar
  • 1 Tbsp Crushed Garlic
  • 1 Tsp Oregano
  • 1 Tsp Honey
  • Dash of Black Pepper
  • 3 Slices of Prosciutto
  • ½ C Pesto
Instructions
  1. To prep the marinade, mix olive oil, balsamic vinegar, garlic, oregano, honey and black pepper in a large plastic bag or sealed container.
  2. Tenderize chicken and butterfly.
  3. Let chicken marinade at least 45 min, or overnight.
  4. Pre-heat oven to 375.
  5. Take chicken out of container and stuff with pesto.
  6. Wrap the prosciutto around the chicken with the open ends tucked under.
  7. Place chicken in an oven safe pan.
  8. Once all chicken breasts are stuffed and wrapped, pour remaining marinade on top.
  9. Bake for 30-40min until chicken is cooked thoroughly.
